Aussie Chicken:
4-6 chicken breast halves 2 c sliced mushrooms
8-12 slices of bacon 2 c shredded colby-jack cheese
1 T olive oil Seasoning salt
Rub chicken with seasoning salt and refrigerate for about 30 min. Cook bacon in a non-stick skillet. You can either use the grease from the bacon to sautee the chicken or use the 1 T olive oil. Cook chicken breasts about 7-10 min per side until cooked through. Put breasts in 9x13 baking dish and cover with sauce (directions below), then layer with mushrooms, bacon, and cheese. Bake at 350 for 15 min. Serve with reserved sauce.
Sauce:
1/2 c mustard 1/4 c mayo
1/2 c honey 1 T onion powder
1/4 c light corn syrup
Combine all ingredients, mixing very well. Reserve about 1/2 the sauce for later. (If you use light mayo of if it is very cold it looks lumpy in the mixture. It still tastes great, but if it looks funny you can use a whisk or mixer. It doesn't affect the taste at all but it isn't very pretty.)
Spinach, Mandarin Oranges, Strawberries and Raspberry Vinaigrette Dressing
Simply Limeade/Lemonade
For Dessert: Hot Lava Cake
Thursday June 3rd
Went to this Super Cool Antique Store near our home (we will be returning to pick up fresh farm eggs for 2.00)
Farmers Market for peaches and pink lady apples
Visited Downtown Columbus and went to my favorite little Cafe "Fountain City Coffee"
Enjoyed yummy Gourmet Grilled Cheese: Feta, Mozzarella, Provolone, With Greek Dressing
with a Peach-Pear-Apricot Smoothie
Mom found a cool history book describing how Columbus was founded and how Fort Benning was founded
Drove through the cobblestone historic district of Columbus enjoying all the beautiful Victorian Homes. Someday I will have a wrap around porch with a porch swing and Adirondack porch chairs.
We also stopped at the downtown historic fountain and let Ashton play in the water. He had so much fun.
Browsed Barnes and Noble for a good Children's Picture Book of Boats - no luck.
It was super hot so we headed back home and got ready for the pool. We were the only ones to grace its presence and the WATER was so refreshing on a hot Summer day. Ashton loved playing with Grandma.
Friday June 4th - Said lots of prayers for Daddy His last study day!
For Breakfast: Maple Broiled Bacon and Pralines and Cream Baked French Toast with strawberries and peaches
Grandma played with Ashton outside with his cars while I attended to my Relief Society calling, and than we swung him on the swings!
Had my afternoon appointment for Jaida
Off To Visit The Historic Site Westville. They had the EMT's all ready just in case I went into labor. Enjoyed a nice picnic in the air conditioned car.

Westville is a functioning living history village
A working 1850 Town - is a meticulously recreated nineteenth-century western Georgia village. Located at Lumpkin, Georgia in the Chattahoochee River valley, Westville has, since 1970, been a living history museum of the life, culture, crafts, and lifestyles of the people of Georgia more than a century and a half ago. It is a recreation of the real life of the ordinary people of the mid-neneteenth century deep south. It is biscuits and quilts, games and work, church and school.
Westville was super cool our favorite tour guide was James, an African American, who had so much pride in his job, we enjoyed listening to him. We loved the Mule, carriage ride. It was super hot and we walked a little bit and than jumped on board and we were so glad we did. It was so good to see a plantation's owners home and right next to it was a real depiction of a slave's home made out of 1860 bricks. James actually had Auburn University students build it with him two years ago.
Mom and I had a fun date night (Hungry Howies Pizza - Howie Maui with Garlic Herb crust and their yummy cheese herb and garlic bread sticks) - and picked up a pint of peach and black raspberry ice cream from Bruster's ice cream and watched TAKEN. Mom has not seen it.
Saturday June 5th - Dad takes his test! HE COMES HOME TODAY!
